  • 1 tbsp olive oil
  • 1 medium onion
  • 3 cloves garlic
  • 1 inch ginger fresh
Main Protein
  • 4 pieces chicken thighs
Purees & Sauces
  • 1 cup pumpkin purée
  • 2 tsp curry powder
  • 1 tsp cumin
  • 0.5 tsp cinnamon
  • 0.5 tsp salt
  • 0.25 tsp cayenne optional
Coconut & Liquids
  • 1 can coconut milk
Vegetables
  • 2 carrots carrots
  • 2 potatoes potatoes
Sauce & Seasonings
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp ketchup
  • 1 tsp thyme
  • to taste pepper

Method
 

  1. Sauté onion, garlic, and ginger in olive oil until fragrant.
  2. Add onion mixture, chicken, pumpkin purée, spices, salt, and coconut milk to slow cooker. Cook on low 6–7 hours.
  3. Add carrots and potatoes, then layer chicken thighs on top. Mix honey, soy, ketchup, thyme, salt, and pepper; pour over.
  4. Cook on low 6–7 hours until chicken and vegetables are tender. Serve warm.
  5. Optional: Adjust seasoning, serve with bread or rice.

Notes

For extra flavor, garnish with fresh herbs before serving.
