Method
- Sauté onion, garlic, and ginger in olive oil until fragrant.
- Add onion mixture, chicken, pumpkin purée, spices, salt, and coconut milk to slow cooker. Cook on low 6–7 hours.
- Add carrots and potatoes, then layer chicken thighs on top. Mix honey, soy, ketchup, thyme, salt, and pepper; pour over.
- Cook on low 6–7 hours until chicken and vegetables are tender. Serve warm.
- Optional: Adjust seasoning, serve with bread or rice.
Notes
For extra flavor, garnish with fresh herbs before serving.
