  • 2 lbs boneless chicken thighs
  • 1 cup diced onions
  • 3 cloves garlic, minced
  • 4 cups chopped carrots
  • 4 cups cubed potatoes
  • 2 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

  • 1 cup frozen peas
  • 1/4 cup fresh parsley, chopped

Method
 

  1. Place chicken thighs in crockpot, add vegetables and broth.
  2. Season with thyme, rosemary, salt, and pepper.
  3. Cook on low for 6-8 hours or high for 4-5 hours.
  4. Add frozen peas in last 30 minutes, then shred chicken and stir in parsley.
