Ingredients
  

Pumpkin
  • 1 cup pumpkin puree
  • 2 eggs eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1 cup oat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix pumpkin, eggs, maple syrup, and vanilla in a bowl.
  3. Add protein powder, oat flour, baking powder, cinnamon, nutmeg, and salt; stir until combined.
  4. Divide batter into muffin cups.
  5. Bake for 20-25 minutes until a toothpick comes out clean.
  6. Cool before serving.
