Ingredients
  

Vegetables
  • 4 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh or frozen)
Cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Other ingredients
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste Salt and pepper
  • 2 tablespoons olive oil
  • 1 cup breadcrumbs

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook onion and garlic in olive oil until translucent, then add zucchini, cook 5 mins.
  3. Add tomatoes, corn, oregano, basil, salt, and pepper; cook 3-4 mins.
  4. Mix vegetables with mozzarella and half Parmesan, transfer to a greased dish.
  5. Combine breadcrumbs with remaining Parmesan, sprinkle over casserole, bake 25-30 mins.

Notes

Use fresh herbs for extra flavor and adjust salt to taste.
