Method
- Preheat oven to 375°F (190°C).
- Cook onion and garlic in olive oil until translucent, then add zucchini, cook 5 mins.
- Add tomatoes, corn, oregano, basil, salt, and pepper; cook 3-4 mins.
- Mix vegetables with mozzarella and half Parmesan, transfer to a greased dish.
- Combine breadcrumbs with remaining Parmesan, sprinkle over casserole, bake 25-30 mins.

Use fresh herbs for extra flavor and adjust salt to taste.
