Ingredients
  

Batter
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup canned pumpkin puree
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup peeled and diced apples about 1 medium apple
  • 1/3 cup rolled oats
  • 1/2 tsp ground cinnamon (for streusel topping)
  • 1/4 cup cold butter for streusel topping
  • 1/4 cup all-purpose flour for streusel topping

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix dry ingredients in a bowl; combine wet ingredients separately.
  3. Combine wet and dry, fold in apples.
  4. Prepare streusel by mixing oats, cinnamon, butter, and flour.
  5. Fill muffin cups 2/3 full, top with streusel, and bake 18-20 mins.
