Method
- Pierce sausages with a knife, then brown in olive oil over medium-high heat. Transfer to a baking dish.
- Cook onion, garlic, and red pepper in the same skillet until softened. Add rice and cook for 1 minute.
- Add broth, corn, Old Bay, salt, and pepper; bring to a boil. Pour over sausages and cover with foil.
- Bake at 375°F (190°C) for 30-35 minutes until rice is tender. Let stand 5 minutes, then sprinkle with cilantro before serving.
