Ingredients
  

Meat
  • 1 lb spicy or sweet Italian beef sausage, or bratwurst
  • 2 T extra-virgin olive oil
  • 1 unit onion, thinly sliced in slivers
  • 2 cloves garlic, finely minced
  • 1 large red bell pepper, thinly sliced in strips
  • 1.5 c Arborio rice
  • 3.25 c chicken broth
  • 2 c frozen corn, thawed
  • 1 tsp Old Bay cajun seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 3 T chopped cilantro

Method
 

  1. Pierce sausages with a knife, then brown in olive oil over medium-high heat. Transfer to a baking dish.
  2. Cook onion, garlic, and red pepper in the same skillet until softened. Add rice and cook for 1 minute.
  3. Add broth, corn, Old Bay, salt, and pepper; bring to a boil. Pour over sausages and cover with foil.
  4. Bake at 375°F (190°C) for 30-35 minutes until rice is tender. Let stand 5 minutes, then sprinkle with cilantro before serving.

Notes

Ensure sausages are fully cooked before serving.
