Ingredients
  

Rice and Chicken Mixture
  • 2 cups cooked rice
  • 2 cups cooked, shredded chicken
  • 1 can cream of chicken soup 10.5 oz can
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup breadcrumbs optional
  • 1 tablespoon olive oil optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix rice, chicken, soup, broth, vegetables, garlic, onion, and pepper in a bowl.
  3. Transfer to a greased 9x13 inch dish, top with cheese, and add breadcrumbs mixed with olive oil if desired.
  4. Cover with foil and bake for 30 minutes, then uncover and bake 10-15 minutes until bubbly and golden.

Notes

You can add extra vegetables or cheese for more flavor.
