Method
- Preheat oven to 375°F (190°C). Line muffin tin with paper cups.
- Mix flour, pumpkin spice, baking soda, and salt. Set aside.
- Combine pumpkin, sugars, eggs, oil, and vanilla. Mix in dry ingredients. Fill muffin cups 3/4 full.
- Beat cream cheese with sugar, egg yolk, and vanilla until smooth. Swirl about 1 tablespoon into each muffin.
- Bake for 18-20 minutes. Cool for 10 minutes before serving.
Notes
Swirling the cream cheese creates a beautiful marbled effect, but dropping spoonfuls works too.
