Method
- Preheat oven to 350 degrees F and spray a 9x9 casserole dish with cooking spray.
- Cook sausage in a skillet until brown and crumbly. Drain.
- Toast bread and cut into 1 inch cubes.
- Whisk together eggs, milk, salt, pepper, and Dijon mustard.
- Add sausage, bread cubes, and 3/4 cup of cheddar. Mix well.
- Pour into greased casserole dish and cover with plastic wrap.
- Refrigerate for 20 minutes.
- Uncover and top with remaining 3/4 cup of cheese.
- Bake for 40-50 minutes or until a knife inserted in the center comes out clean.
- Let rest for a few minutes before slicing and serving.
