  • 1 pound beef breakfast beef sausage
  • 5 large eggs
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup whole milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 slices white bread cut into 1-inch cubes and toasted
  • 0.5 teaspoon Dijon mustard

Method
 

  1. Preheat oven to 350 degrees F and spray a 9x9 casserole dish with cooking spray.
  2. Cook sausage in a skillet until brown and crumbly. Drain.
  3. Toast bread and cut into 1 inch cubes.
  4. Whisk together eggs, milk, salt, pepper, and Dijon mustard.
  5. Add sausage, bread cubes, and 3/4 cup of cheddar. Mix well.
  6. Pour into greased casserole dish and cover with plastic wrap.
  7. Refrigerate for 20 minutes.
  8. Uncover and top with remaining 3/4 cup of cheese.
  9. Bake for 40-50 minutes or until a knife inserted in the center comes out clean.
  10. Let rest for a few minutes before slicing and serving.
