  • 6 large eggs
  • 0.5 cup milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 32 ounce frozen tater tots

Method
 

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Grease a 9x13 inch baking dish.
  3. Spread cooked sausage evenly in the dish.
  4. Whisk eggs, milk, salt, and pepper in a bowl.
  5. Pour egg mixture over the sausage.
  6. Sprinkle 1 1/2 cups cheese over the eggs.
  7. Arrange tater tots in a single layer.
  8. Bake for 30-40 minutes, until set and golden.
  9. Sprinkle remaining 1/2 cup cheese on top.
  10. Bake 5 more minutes, until cheese is melted.
  11. Let stand for 10 minutes before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the egg mixture.
