  • 1 head broccoli chopped
  • 1/2 large yellow onion diced (or 1 onion)
  • 5 slices turkey bacon
  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • pepper

Method
 

  1. Set the oven to 400 degrees.
  2. Cook the turkey bacon according to the package instructions.
  3. Remove bacon and cut into small chunks.
  4. Sauté olive oil, veggies, salt, and pepper for 5-10 minutes.
  5. Mix eggs, cheddar cheese, garlic powder, salt, and pepper in a bowl.
  6. Add veggies and bacon to a greased baking dish. Pour egg mixture on top.
  7. Sprinkle extra cheese on top if desired. Bake for 20 minutes.
  8. Let cool, cut into squares, and enjoy!
