Ingredients
  

Vegetables
  • 1 head cauliflower, chopped
  • 1 head broccoli, chopped
Dairy & Seasonings
  • 1 cup cheddar cheese, shredded
  • 1 cup cream of mushroom soup
  • 0.5 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
Breadcrumb topping
  • 0.5 cup breadcrumbs

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Blanch cauliflower and broccoli in boiling water for 3-4 minutes, then drain.
  3. Mix mushroom soup, milk, garlic powder, salt, and pepper.
  4. Layer vegetables in a baking dish, pour soup mixture over, then top with cheese.
  5. Mix breadcrumbs with olive oil and sprinkle over cheese, then bake for 25-30 minutes.

Notes

For a crunchier topping, toast the breadcrumbs before adding.
