- Preheat the oven and prepare the potatoes: Roast potatoes with olive oil and 1 tsp salt at 350°F (180°C) for 30 minutes.
- Cook the turkey bacon and onions: Cook bacon and onions until crisp and soft. Stir in garlic and sauté for 20 seconds.
- Assemble the casserole: Layer potatoes, bacon-onion mixture, and half the cheese in a dish.
- Mix the egg base: Whisk eggs, milk, cream, 1 tsp salt, and pepper.
- Bake the casserole: Pour egg mixture over layers, top with remaining cheese, and bake for 30–40 minutes.
- Rest and serve: Let rest for 5–10 minutes before serving.
Notes
For a vegetarian option, skip the bacon and add some chopped bell peppers or mushrooms.
