  • 9 oz streaky turkey bacon chopped
  • 1 onion finely chopped
  • 2 cloves garlic crushed

  • 5 eggs
  • 0.5 cup milk
  • 0.75 cup heavy/whipping cream
  • 1 tsp black pepper

Method
 

  1. Preheat the oven and prepare the potatoes: Roast potatoes with olive oil and 1 tsp salt at 350°F (180°C) for 30 minutes.
  2. Cook the turkey bacon and onions: Cook bacon and onions until crisp and soft. Stir in garlic and sauté for 20 seconds.
  3. Assemble the casserole: Layer potatoes, bacon-onion mixture, and half the cheese in a dish.
  4. Mix the egg base: Whisk eggs, milk, cream, 1 tsp salt, and pepper.
  5. Bake the casserole: Pour egg mixture over layers, top with remaining cheese, and bake for 30–40 minutes.
  6. Rest and serve: Let rest for 5–10 minutes before serving.
