  • 3 large potatoes peeled and cubed
  • 1-2 tbsp olive oil
  • 2 tsp salt
  • 250 g streaky turkey bacon chopped
  • 1 onion finely chopped
  • 2 garlic cloves crushed
  • 2 cups grated cheddar cheese
  • 5 eggs
  • 0.5 cup milk
  • 0.75 cup heavy/whipping cream
  • 2 tsp salt
  • 1 tsp pepper

Method
 

  1. Pre-heat the oven to 180ºC.
  2. Toss potatoes with olive oil and salt, bake until crisp and golden (approx. 30 minutes).
  3. Fry onion and turkey bacon until bacon is crisp. Add garlic, cook for 20 seconds.
  4. Place potatoes, bacon mixture, and half the cheese in a casserole dish.
  5. Whisk eggs, milk, cream, and seasoning. Pour over casserole. Top with remaining cheese.
  6. Bake for 30-40 minutes until golden brown and cooked through. Rest for 5-10 minutes before serving.

Notes

For a vegetarian option, omit the bacon and add more vegetables like bell peppers or mushrooms.
