Method
- Pre-heat the oven to 180ºC.
- Toss potatoes with olive oil and salt, bake until crisp and golden (approx. 30 minutes).
- Fry onion and turkey bacon until bacon is crisp. Add garlic, cook for 20 seconds.
- Place potatoes, bacon mixture, and half the cheese in a casserole dish.
- Whisk eggs, milk, cream, and seasoning. Pour over casserole. Top with remaining cheese.
- Bake for 30-40 minutes until golden brown and cooked through. Rest for 5-10 minutes before serving.
Notes
For a vegetarian option, omit the bacon and add more vegetables like bell peppers or mushrooms.
