Wild Rice
  • 1 cup wild rice, uncooked
Meat
  • 1 pound Italian beef sausage, casings removed
Vegetables
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 diced bell pepper
Liquids and Seasonings
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste Salt and pepper Salt and pepper
Cheese
  • 1 cup shredded cheddar cheese
Garnish
  • as needed Fresh parsley Fresh parsley for garnish

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook sausage until browned; add vegetables and cook until tender.
  3. Stir in rice, broth, cream, thyme, paprika, salt, and pepper; simmer until rice is tender.
  4. Transfer to a greased casserole dish, top with cheese, cover, and bake 30 minutes.
  5. Remove foil, bake 10 more minutes until cheese is bubbly; garnish with parsley.
