  • 1 pound breakfast sausage
  • 1 cup cranberries (dried or fresh)
  • 1 diced onion
  • 2 diced celery stalks
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 8 cups stuffing mix
  • 4 cups chicken broth
  • 6 large eggs
  • 1 cup milk
  • to taste Salt and pepper
  • for garnish Fresh parsley optional

Method
 

  1. Preheat oven to 350°F (175°C). Cook sausage until browned; set aside.
  2. Sauté onion and celery until softened, about 5 minutes.
  3. Mix sausage, vegetables, cranberries, herbs, and stuffing in a bowl. Add broth and combine.
  4. Whisk eggs, milk, salt, and pepper; pour over mixture. Transfer to a greased dish.
  5. Refrigerate for at least 2 hours. Bake covered 30 min, then uncovered 15-20 min until golden.
  6. Let cool slightly, garnish with parsley if desired, and serve.

Notes

This make-ahead casserole is perfect for holiday brunches and can be prepared the night before.
