Wet ingredients
  • 1/2 cup pumpkin puree
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 1 tablespoon powdered sugar (optional, for sweetening cream cheese)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix dry ingredients in a bowl; combine wet ingredients separately.
  3. Combine wet and dry, then prepare cream cheese mixture.
  4. Fill muffin liners with batter, add cream cheese, then top with more batter.
  5. Bake for 18-20 minutes, cool before serving.

Notes
