  • 4 boneless, skinless chicken breasts cooked and shredded
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup pickled jalapeños diced
  • 1/4 cup pickled jalapeño juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup crushed Ritz crackers
  • 4 tablespoons butter melted

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Combine cream cheese, sour cream, mayonnaise, cheeses, jalapeños, juice, and spices in a bowl.
  3. Add shredded chicken and stir to combine.
  4. Pour into a greased 9x13 inch baking dish.
  5. Combine crushed Ritz crackers and melted butter in a small bowl.
  6. Sprinkle cracker mixture over the chicken mixture.
  7. Bake for 20-25 minutes, or until golden brown and bubbly.
  8. Let cool slightly before serving.

Notes

For a spicier casserole, add more jalapeños or a pinch of cayenne pepper to the cheese mixture.
