  • 1 pound diced turkey bacon or breakfast beef sausage
  • 12 large eggs
  • 2 cups half and half or dairy-free milk
  • 1 teaspoon garlic powder
  • 1.5 teaspoons salt to taste
  • 0.5 teaspoon freshly ground black pepper to taste
  • 2.5 cups shredded cheese cheddar preferred
  • 26 ounce frozen shredded hashbrowns
  • 1 cup chopped onion white or yellow, divided
  • 0.5 cup shredded cheese cheddar preferred, for topping

Method
 

  1. Cook bacon in skillet, drain fat.
  2. Whisk eggs, half and half, garlic powder, salt, and pepper.
  3. Add cheese, hashbrowns, onion, and bacon to egg mixture.
  4. Spray Crockpot, pour in mixture, cover.
  5. Cook on LOW for 8 hours, check after 7.5 hours.
  6. Sprinkle remaining cheese, cook 30 minutes until melted.
  7. Serve warm, garnish as desired.

Notes

For a spicier kick, add a pinch of red pepper flakes to the egg mixture.
