Method
- Roast the butternut squash at 400°F (200°C) for 30-40 minutes until tender.
- Cook pasta according to package instructions; drain and set aside.
- Sauté diced onion in olive oil until translucent, then add garlic and cook for 1 minute.
- Add sausage to skillet, cook until browned, then stir in spinach and thyme until wilted.
- Scoop roasted squash into skillet, mix with sausage, then add cooked pasta. Season with salt and pepper, top with Parmesan.
Notes
For extra flavor, sprinkle with fresh herbs or additional Parmesan before serving.
