  • 1 cup canned pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
Cream Cheese Filling
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Mix dry ingredients in a bowl; set aside.
  3. Combine pumpkin, sugars, oil, eggs, vanilla; mix well.
  4. Gradually add dry ingredients to wet; stir until just combined.
  5. Beat cream cheese, powdered sugar, lemon juice until smooth.
  6. Layer batter and cream cheese mixture in pan; swirl gently.
