  • 1 pound turkey bacon cooked and crumbled
  • 30 ounce frozen shredded hash browns thawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 large eggs
  • 0.5 cup milk
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • chopped green onions Optional: for garnish

Method
 

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Grease a 9x13 inch baking dish.
  3. Combine hash browns, cheeses, and bacon in a bowl.
  4. Spread mixture into the baking dish.
  5. Whisk eggs, milk, salt, and pepper in a separate bowl.
  6. Pour egg mixture over hash brown mixture.
  7. Bake for 45-50 minutes, or until set and golden brown.
  8. Let cool slightly before serving.
  9. Garnish with green onions, if desired.

Notes

For a spicier kick, add a pinch of red pepper flakes to the egg mixture.
