Ingredients
  

Main
  • 1 cup uncooked long-grain rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 cup corn (frozen or canned)
  • 1 cup vegetable broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste Salt and pepper
  • optional Fresh cilantro for garnish

Method
 

  1. Combine rice, beans, tomatoes, corn, broth, and spices in a large pot.
  2. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  3. Stir in half of the cheese until melted, then top with remaining cheese and let sit for 5 minutes.
  4. Garnish with cilantro if desired and serve hot.

Notes

You can customize the spice level by adjusting the chili powder.
