  • 4 cups frozen hashbrowns thawed
  • 8 large eggs
  • 1 cup cooked turkey ham diced
  • 2 cups shredded cheddar cheese
  • 1 cup milk whole or 2%
  • 1/2 cup onion finely chopped (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder optional
  • 2 tablespoons fresh parsley chopped (for garnish)
  • Cooking spray or butter for greasing the baking dish

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  2. Whisk together eggs, milk, salt, pepper, and garlic powder (if using).
  3. Stir in hashbrowns, turkey ham, onion (if using), and 1 1/2 cups cheddar cheese. Pour into baking dish.
  4. Sprinkle remaining 1/2 cup cheddar cheese on top. Bake for 45-50 minutes until set and golden brown.
  5. Let rest for 5 minutes. Garnish with parsley, cut into squares, and serve warm.

Notes

For a spicier kick, add a pinch of red pepper flakes to the egg mixture.
