Ingredients
  

Vegetables
  • 2 lbs butternut squash, peeled and cubed
  • 1 lb Brussels sprouts, trimmed and halved
Protein
  • 1 lb chicken thighs, bone-in, skin-on
Seasonings & Liquids
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 cup chicken broth
  • 1/4 cup maple syrup

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss vegetables with 2 tbsp olive oil, salt, pepper, thyme, and garlic powder.
  3. Rub chicken thighs with remaining olive oil, salt, and pepper; place in a roasting pan.
  4. Arrange vegetables around chicken; pour broth and maple syrup over everything.
  5. Roast for 40-45 minutes until cooked and tender; let rest 5 minutes before serving.
