  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 12 large eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooked beef sausage or turkey bacon Optional: crumbled

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Combine hash browns, cheese, onion, and bell pepper in a bowl. Add sausage or bacon, if using.
  3. Spread mixture in a greased 9x13 inch baking dish.
  4. Whisk together eggs, milk, salt, and pepper in a separate bowl.
  5. Pour egg mixture over hash brown mixture.
  6. Bake for 45-50 minutes, or until set and golden brown.
  7. Let cool slightly before serving. Enjoy!
