Ingredients
  

Meat
  • 1 lb ground chicken
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
Tortillas
  • 8 small corn tortillas
Fillings
  • 1 cup black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (optional)
Serving toppings
  • Sour cream and salsa for serving (optional)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Cook onion and garlic in olive oil until softened, then add ground chicken and cook until browned.
  3. Stir in spices, salt, and pepper; cook for 2 minutes.
  4. Arrange tortillas in a baking dish, spoon chicken mixture onto each, top with beans, tomatoes, and cheese.
  5. Bake for 10-12 minutes until crispy and cheese melts, then top with lettuce and serve with sour cream and salsa.

Notes

For a healthier option, use low-fat cheese and add extra vegetables.
