  • 4 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons butter, melted

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix zucchinis, onion, cheese, sour cream, and soup; season with salt and pepper.
  3. Transfer mixture to a greased baking dish.
  4. Combine crushed crackers with melted butter and sprinkle over casserole.
  5. Bake for 30-35 minutes until golden and bubbly.
  6. Let cool briefly before serving.

Notes

For a richer flavor, add a sprinkle of herbs like thyme or parsley before baking.
