Ingredients
  

Main ingredients
  • 32 oz frozen tater tots
  • 1 lb breakfast sausage
  • 6 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup diced bell peppers (optional)
  • 1 cup diced onions (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Seasonings
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Cook sausage until browned, then drain.
  2. Whisk eggs, milk, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Mix cooked sausage, bell peppers, and onions into the egg mixture.
  4. Layer half of the tater tots in a greased 9x13 dish, pour egg mixture, then top with cheese.
  5. Add remaining tater tots on top, sprinkle with cheese, cover, and bake for 30 minutes. Remove foil and bake 15-20 more minutes until bubbly and golden.

Notes

For a healthier option, use reduced-fat cheese or add extra vegetables.
