Method
- Heat oil in a pan over medium heat.
- Add mustard seeds and let them splutter. Then add cumin seeds and chopped onion, sauté until translucent.
- Stir in green chilies and mixed vegetables, cook for 3-4 minutes.
- Add turmeric and salt, then fold in cooked rice and heat through for 2-3 minutes.
- Garnish with coriander leaves and serve hot with lemon wedges.
