Ingredients
  

Rice and Vegetables
  • 2 cups cooked rice
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 piece onion, finely chopped
  • 2 green chilies green chilies, slit
  • 0.5 cup mixed vegetables (carrots, peas, beans)
  • 0.25 teaspoon turmeric powder
  • to taste Salt Salt
  • for garnish Fresh coriander leaves
  • for serving Lemon wedges

Method
 

  1. Heat oil in a pan over medium heat.
  2. Add mustard seeds and let them splutter. Then add cumin seeds and chopped onion, sauté until translucent.
  3. Stir in green chilies and mixed vegetables, cook for 3-4 minutes.
  4. Add turmeric and salt, then fold in cooked rice and heat through for 2-3 minutes.
  5. Garnish with coriander leaves and serve hot with lemon wedges.

Notes

Use fresh ingredients for best flavor. Adjust salt and spice levels to taste.
