Ingredients
  

Potatoes
  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 1 cup sour cream
  • 1 cup cream cheese, softened
  • 1/2 cup butter, melted
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup green onions, chopped
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 cup crushed cornflakes for topping

Method
 

  1. Preheat oven to 350°F (175°C). Boil potatoes until tender, then drain.
  2. Mix sour cream, cream cheese, melted butter, garlic powder, salt, and pepper. Add potatoes and stir.
  3. Fold in cheddar, Parmesan, and green onions. Transfer to a greased baking dish.
  4. Top with crushed cornflakes and bake for 25-30 minutes until golden.
  5. Let cool briefly before serving. Enjoy!

Notes

For extra flavor, add cooked bacon bits or chopped herbs.
