Ingredients
  

Dry ingredients
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
Wet ingredients
  • 1 1/2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
Cream cheese filling
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract

Method
 

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Mix dry ingredients in one bowl; combine wet ingredients in another.
  3. Combine wet and dry until just mixed. Beat cream cheese, sugar, egg yolk, and vanilla until smooth.
  4. Fill muffin cups halfway with pumpkin batter, add a spoonful of cream cheese mixture, then top with more pumpkin batter. Swirl gently.
  5. Bake for 20-25 minutes until a toothpick comes out clean. Cool before serving.

Notes

For best results, do not overmix the batter to keep muffins light and fluffy.
