Method
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- Mix dry ingredients in one bowl; combine wet ingredients in another.
- Combine wet and dry until just mixed. Beat cream cheese, sugar, egg yolk, and vanilla until smooth.
- Fill muffin cups halfway with pumpkin batter, add a spoonful of cream cheese mixture, then top with more pumpkin batter. Swirl gently.
- Bake for 20-25 minutes until a toothpick comes out clean. Cool before serving.
Notes
For best results, do not overmix the batter to keep muffins light and fluffy.
