Pumpkin Mixture
  • 1 cup pumpkin puree
  • 2 eggs eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
Cream Cheese Layer
  • 1/2 cup cream cheese, softened

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix pumpkin, eggs, oil, vanilla, and sugars until smooth.
  3. Whisk dry ingredients separately, then combine with wet ingredients.
  4. Beat cream cheese until smooth.
  5. Pour half batter into pan, add cream cheese, then top with remaining batter. Swirl gently.
  6. Bake 50-60 minutes, cool before serving.

Notes

For best results, use full-fat cream cheese and fresh spices.
