  • 2 cups leftover cooked rice
  • 1 cup mixed vegetables (fresh or frozen)
  • 2 eggs eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • to taste Salt and pepper to taste
  • Green onions chopped (for garnish)

Method
 

  1. Heat sesame oil in a pan over medium heat.
  2. Sauté garlic and ginger until fragrant.
  3. Add vegetables and cook until heated.
  4. Push vegetables aside, scramble eggs in the empty space.
  5. Add rice, soy sauce, and stir. Cook 3-5 mins until crispy.

Notes

Use high heat for a crispy texture and customize with your favorite vegetables.
