  • 1/2 teaspoon teaspoon ground nutmeg
  • 1/4 teaspoon teaspoon ground cloves
  • 1/4 teaspoon teaspoon ground ginger
Wet Ingredients
  • 2 large pieces eggs
  • 1 1/4 cups cups granulated sugar
  • 1/2 cup cups vegetable oil or neutral oil
  • 1/3 cup cups maple syrup
  • 1 cup cups canned pumpkin puree not pumpkin pie filling
  • 1 teaspoon teaspoon vanilla extract
Streusel Topping
  • 1/2 cup cups granulated sugar
  • 1/3 cup cups all-purpose flour
  • 1 teaspoon teaspoon ground cinnamon
  • 1/4 teaspoon teaspoon salt
  • 1/4 cup cups unsalted butter cold, cubed
Maple Glaze
  • 2-3 tablespoons tablespoons maple syrup
  • 1 tablespoon tablespoon milk or cream

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. Mix dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. Whisk eggs and sugar, then add oil, maple syrup, pumpkin, and vanilla. Mix until smooth.
  4. Fold dry ingredients into wet until just combined. Prepare streusel topping with sugar, flour, cinnamon, salt, and butter.
  5. Pour batter into pan, sprinkle streusel on top, and bake for 55-65 minutes. Cool, then drizzle with maple glaze.

Notes

Ensure not to overmix the batter for a tender crumb. Adjust glaze thickness with more milk or syrup as needed.
