  • 2 cups cooked chicken, shredded
  • 1 cup uncooked white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • optional Fresh cilantro for garnish

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix chicken, rice, beans, corn, tomatoes, broth, spices, salt, and pepper in a bowl.
  3. Transfer to a greased baking dish, cover with foil, and bake for 45 minutes.
  4. Remove foil, sprinkle cheese on top, and bake for 15 minutes until melted.
  5. Let cool briefly, garnish with cilantro if desired, and serve.

Notes

For extra flavor, add a squeeze of lime before serving.
