Ingredients
  

Main ingredients
  • 2 cups cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 0.25 cup chopped fresh cilantro (optional)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix rice, beans, corn, tomatoes, salsa, spices, salt, and pepper in a bowl.
  3. Transfer to a greased baking dish, top with cheese.
  4. Bake covered for 25 minutes, then uncover and bake 10-15 minutes until bubbly.
  5. Garnish with cilantro if desired and serve hot.

Notes

For extra flavor, add a squeeze of lime before serving.
