Million Dollar Potato Casserole

Ingredients
  

Potatoes
  • 2 pounds potatoes, peeled and diced
  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup diced onions
  • 0.5 cup melted butter
  • 1 tbsp garlic powder
  • salt and pepper, to taste salt and pepper to taste
  • 1 cup crushed cornflakes or potato chips (for topping)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Boil diced potatoes in salted water until tender, then drain.
  3. Mix sour cream, cream of chicken soup, cheddar, onions, melted butter, garlic powder, salt, and pepper.
  4. Stir drained potatoes into the sauce, then spread in the baking dish and top with crushed cornflakes.
  5. Bake for 30-35 minutes until bubbly and golden, then serve warm.

Notes

For extra flavor, add chopped herbs or bacon bits on top before baking.
