  • 2 slices Thick-cut bread (sourdough or brioche)
Toppings
  • 1 Avocado
  • 2 Eggs
  • 2 oz Smoked salmon (optional)
  • 1 tsp Everything bagel seasoning
  • 1/4 tsp Red pepper flakes (optional)
  • to taste Salt and pepper
  • 1 sprig Fresh dill or chives (for garnish)

Method
 

  1. Toast the bread.
  2. Mash avocado with salt, pepper, and red pepper flakes (if using).
  3. Cook the eggs to your liking.
  4. Spread avocado on toast.
  5. Top with cooked egg.
  6. Add smoked salmon (if using).
  7. Sprinkle with everything bagel seasoning.
  8. Garnish with dill or chives.
  9. Serve immediately.

Notes

For a vegan option, skip the egg and smoked salmon and add some roasted vegetables.
