  • 1 lb breakfast beef sausage can be beef, turkey, or vegetarian
  • 1 cup onion diced
  • 1 cup bell pepper diced
  • 1 cup shredded cheddar cheese or your favorite cheese
  • 1/2 cup milk dairy or non-dairy
  • 1/2 cup sour cream or dairy-free substitute
  • 1/4 cup chopped green onions optional, for garnish
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt adjust to taste
  • 1/2 cup shredded mozzarella cheese optional, for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Cook sausage in a skillet over medium heat until browned. Crumble with a spatula.
  3. Drain excess fat and set sausage aside.
  4. Sauté diced onion and bell pepper in the same skillet for 3-4 minutes until softened.
  5. Add garlic powder, paprika, black pepper, and salt. Cook for 1-2 minutes until fragrant. Remove from heat.
  6. In a large bowl, combine hash browns, sausage, vegetables, cheddar cheese, sour cream, and milk. Stir well.
  7. Taste and adjust seasoning if needed.
  8. Transfer mixture to the baking dish, spreading evenly.
  9. Sprinkle mozzarella cheese over the top (optional).
  10. Bake for 35-45 minutes, until golden and bubbly. Broil for the last 2-3 minutes for a crispier top.
  11. Let cool before slicing. Garnish with green onions if desired, and serve warm.
