  • 1 pound chicken breast cubed
  • 1 cup pineapple cubed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger grated
  • to taste Salt and pepper
  • 1/4 cup green onions sliced
  • 1 tablespoon sesame seeds

Method
 

  1. Heat olive oil in a skillet, cook chicken until golden brown. Remove and set aside.
  2. Sauté onion, garlic, and bell pepper until softened.
  3. Add pineapple and cook for 2 minutes.
  4. Stir in rice, broth, soy sauce, ginger, salt, and pepper. Simmer for 18-20 minutes, or until rice is cooked.
  5. Return chicken to skillet and mix well. Heat through.
  6. Garnish with green onions and sesame seeds.

Notes

For a spicier dish, add a pinch of red pepper flakes.
