Method
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix dry ingredients: whisk flour, baking soda, baking powder, salt, and spices.
- Mix wet ingredients: whisk pumpkin, eggs, oil, sugars, milk, and vanilla.
- Combine: add dry to wet, stir just until combined, fold in nuts or chips if using.
- Pour into pan and bake for 55–65 minutes until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
Notes
Store in an airtight container for up to 3 days or freeze for longer storage.
