Pumpkin Bread

Ingredients
  

Dry ingredients
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground ginger
Wet ingredients
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 2 large eggs
  • ½ cup vegetable oil (or melted butter)
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup milk
  • 1 teaspoon vanilla extract
Optional mix-ins
  • ½ cup chopped walnuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix dry ingredients: whisk flour, baking soda, baking powder, salt, and spices.
  3. Mix wet ingredients: whisk pumpkin, eggs, oil, sugars, milk, and vanilla.
  4. Combine: add dry to wet, stir just until combined, fold in nuts or chips if using.
  5. Pour into pan and bake for 55–65 minutes until a toothpick comes out clean.
  6. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

Store in an airtight container for up to 3 days or freeze for longer storage.
