Pumpkin
  • 1 cup canned pumpkin
Sugar
  • 1 cup sugar
Vegetable Oil
  • 1/2 cup vegetable oil
Eggs
  • 2 large large eggs
Flour
  • 1 1/2 cups all-purpose flour
Baking Soda
  • 1 teaspoon baking soda
Baking Powder
  • 1/2 teaspoon baking powder
Salt
  • 1/2 teaspoon salt
Ground Cinnamon
  • 1 teaspoon ground cinnamon
Ground Nutmeg
  • 1/2 teaspoon ground nutmeg
Ground Cloves
  • 1/4 teaspoon ground cloves
Chopped Walnuts or Pecans
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. Mix pumpkin, sugar, and oil. Add eggs one at a time.
  3. Whisk together dry ingredients. Combine with pumpkin mixture.
  4. Fold in nuts if using. Pour into pan.
  5. Bake 60-70 minutes. Cool before slicing.

Store in an airtight container for up to 3 days or freeze for longer storage.
