  • 1 cup canned pumpkin purée
  • 2 large eggs room temperature
  • 1/2 cup brown sugar light or dark
  • 1/4 cup maple syrup
  • 1/4 cup neutral oil like avocado or vegetable
  • 1 tsp vanilla extract
dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
optional mix-ins
  • 1/2 cup chopped nuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  2. Whisk pumpkin, eggs, sugar, syrup, oil, and vanilla until smooth.
  3. Mix dry ingredients and spices; fold into wet ingredients.
  4. Stir in optional nuts or chocolate chips.
  5. Pour batter into pan, tap to remove air, and bake 55–65 mins.
  6. Cool 10 mins in pan, then transfer to wire rack to cool completely.
