Ingredients
  

Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup pumpkin puree not pumpkin pie filling
Optional Nuts
  • 1/2 cup chopped walnuts or pecans optional
Frosting
  • 4 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk to adjust consistency

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set aside.
  2. Mix dry ingredients in a bowl. In a separate bowl, whisk wet ingredients until smooth.
  3. Combine pumpkin with wet mixture. Gradually add dry ingredients, mixing until just combined. Fold in nuts if using.
  4. Pour batter into pan and bake for 50-60 minutes until a skewer comes out clean. Cool completely.
  5. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Mix in milk to reach desired consistency.
  6. Spread frosting over cooled bread and sprinkle with nuts or cinnamon if desired.
