Ingredients
  

Pumpkin
  • 1 cup canned pumpkin puree
  • 0.5 cup vegetable oil
  • 1 cup sugar
  • 0.5 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
Nuts (optional)
  • 0.5 cup chopped walnuts or pecans optional
Glaze
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1-2 tablespoons milk adjust for desired consistency

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Mix pumpkin, oil, sugars, eggs, and vanilla until combined. Whisk dry ingredients separately, then combine with wet. Fold in nuts if using.
  3. Pour batter into pan and bake for 60-70 minutes. Cool in pan 10 minutes, then transfer to wire rack.
  4. Whisk powdered sugar, maple syrup, and milk to make glaze. Drizzle over cooled bread before serving.

Notes

For extra flavor, add a pinch of ground ginger or cloves to the batter.
