Ingredients
  

Pumpkin
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
Streusel Topping
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 2 tablespoons cold butter
Optional Nuts
  • 1/2 cup chopped nuts optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Mix pumpkin, oil, sugars, eggs, and vanilla until combined.
  3. Whisk dry ingredients; fold into pumpkin mixture. Add nuts if desired.
  4. Pour batter into pan. Mix streusel ingredients until crumbly; sprinkle on top.
  5. Bake 60-70 minutes; cool before removing from pan.

Notes

For extra flavor, add a pinch of cloves or nutmeg to the batter.
