Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
Cheesecake filling
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1/2 cup chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Mix dry ingredients; cream butter and sugars; add pumpkin and vanilla.
  3. Prepare cheesecake filling; scoop dough, fill with cream cheese, and top with dough.
  4. Bake for 10-12 minutes; cool on wire rack.
