Ingredients
  

Dry ingredients
  • 2.5 cups all-purpose flour
  • 1 tbsp pumpkin pie spice
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
Wet ingredients
  • 0.5 cup unsalted butter (softened)
  • 0.75 cup brown sugar
  • 0.75 cup granulated sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 cups chocolate chips

Method
 

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment.
  2. Mix dry ingredients in a bowl. Beat butter with sugars, then add pumpkin, egg, vanilla.
  3. Combine dry and wet ingredients; fold in chocolate chips.
  4. Drop 1 tbsp dough onto sheets, add extra chips on top. Bake 10-12 mins.
  5. Cool slightly before transferring to racks.

Notes

For softer cookies, slightly underbake and let cool on the baking sheet.
