Method
- Preheat oven to 375°F (190°C). Line baking sheets with parchment.
- Mix dry ingredients in a bowl. Beat butter with sugars, then add pumpkin, egg, vanilla.
- Combine dry and wet ingredients; fold in chocolate chips.
- Drop 1 tbsp dough onto sheets, add extra chips on top. Bake 10-12 mins.
- Cool slightly before transferring to racks.
Notes
For softer cookies, slightly underbake and let cool on the baking sheet.
