  • 1 3/4 cups all purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
Wet ingredients
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 3/4 cup semi sweet chocolate chips (plus more for topping)

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin pan with 12 liners.
  2. Mix flour, cinnamon, baking soda, baking powder, and salt in a bowl.
  3. Whisk eggs, sugar, oil, water, and vanilla; then add pumpkin puree.
  4. Combine wet and dry ingredients; fold in chocolate chips. Top with extra chips.
  5. Divide batter into muffin cups and bake for 26-29 minutes. Cool on wire rack.
